Would it work, yes (for various levels of work), but it's decidedly sub-optimal. If you needed a STOVL carrier right this moment, yeah it would work, but that's the only condition it would ever get used.

I think it could act better as an very big helicopter carrier... like this ( made this today for fun)

some fast calculations of the conversion

Emma Maersk conficuration to Helicopter Carrier:

11752 m2 Flight deck (Front 7020 + aft 4732 m2)

5200 m2 Hangar deck (2184 front + 3016 m2 aft)

14 landingspots ( 9 front / 5 aft) a total of 21 helicopters carried.

I tried to make it as a fixed wing carrier but i couldnt find the correct information about the Harrier and/or F35B runway needs. i only found 1000 feet what is long in my vision. the Emma Maersk her front length ( container hatches front) is 185 m so i dont know if thats enough.
